Ingredients Required
- Small Onions (Shallots) a handful or 1 Large Onion sliced
- A Sprig of curry leaves
- 2 Green Chillies
- 1 Tomato Cubed
- Cocunut Milk - Third (Thin) 1 cup, Second (Medium) 1/2 cup and First (Thick) 1/2 cup
- Two cups of diced vegetables including potatoes carrots beans cauliflower and green peas
Jeera Powder 2 teaspoons
Turmeric Powder a pinch
Coriander Powder 1 teaspoon
Red Chilli Powder a pinch (Optional)
Method of Preparation
Cut the small onions (or slice big onions) and add this along with the curry leaves, green chillies, and half the cubed tomato to the thin milk and bring it to a boil. Now add the cubed vegetables and the medium consistency coconut milk along with the jeera, turmeric, coriander and red chilli powders and allow it to simmer for 20 minutes. Now add the thick milk along with the other half cubed tomato and simmer for five minutes. Your vegetable stew is ready. No need to add any oil since the coconut milk contains enough oil. This is a very tasty, healthy and light on the stomach side dish for chapatis, rice, idlis and dosas or even bread. The other option is to add soaked, boiled chickpeas and potatoes instead of the above mentioned vegetables.
